Classic Key Lime Pie

A classic key lime pie is the perfect refreshing summer dessert. It’s incredibly easy to make and is sure to impress your friends and family. With a delicious graham cracker crust filled with a tart lime filling, this pie will have you coming back for seconds.

Ingredients

Lime Filling

  • 4 tsp lime zest

  • 1/2 cup lime juice

  • 4 large egg yolks

  • 1 (14-ounce) can condensed milk

Graham Cracker Crust

  • 9 graham crackers

  • 2 tbsp granulated sugar

  • 5 tbsp unsalted butter, melted

Whipped Cream Topping

  • 3/4 cup chilled heavy cream

  • 1/4 cup powdered sugar

  • 1/2 lime sliced paper-thin (for garnish)

Instructions

  1. Whisk zest and yolks together for 2 minutes until the mixture is a uniform light green in color. Beat in condensed milk, then lime juice. Set aside to thicken for 30 mins.

  2. Preheat oven to 325Β°F. Crush graham crackers until you have an evenly fine bowl of graham cracker crumbs. Add sugar and continue to mix while adding melted butter.

  3. Transfer the graham cracker crumbs to a pie plate and press crumbs into the bottom of the dish to form a crust. Bake the crust for 15-18 minutes and cool completely.

  4. Once the crust is cool, pour the lime filling into the crust. Bake 15-17 minutes until the center is set yet still a little jiggly.

  5. For the whipped cream topping, use an electric mixer to whip the cream to form soft peaks. Slowly add powdered sugar and mix until the peaks are slightly stiff. Pipe the whipped cream decoratively over the pie, or simply spread on top. Garnish with lime slices and a little bit of lime zest.
